Can a wall without defender attack?
There does not currently exist any Wall creature that does not have defender (except creatures with the Changeling ability), although some have an ability to allow them to attack as though they didn’t have defender, or to lose defender.

Defender is a static ability that renders a creature unable to attack.
Does exile count as dying?
If the creature goes to the graveyard and then moves to exile, then it counts as dying. However, if it goes to exile instead of the graveyard, then it does not count as dying. If a creature dealt damage this way would die this turn, exile it instead. If an event is replaced, it never happens.
